Lot Description
LOMA lot. This is a unique and exclusive lot: anaerobically fermented for 144hrs in a sealed tank, with the must or Natural Yeast (is how we call the liquids/leach generated by the Geisha fruits) from a previous tank was added. The must is full of native yeasts, bacteria & fungi from the Baru Volcano Terroir where the previous Geisha was harvested. Sun dried in raised beds. Resting for this lot began on the 25th of March 2022.
