Centro lot located at 1800 Masl inside the forests of Elida Estate, it goes through the middle of the farm all the way to Aguacate lot.
Cherries are depulped and with mucilage are fermented Anaerobic Slow dry for 92 hours adding a “cascara tea” that is basically taking pulp recently depulped and placed in a bucket with fresh water and in a room with controlled temperature fermented for 72 hours before adding it to the depulped coffee in the sealed tank, in the 72 hours of the coffee cherry being fermented the water changes color from the cherry, that water with the cherry is applied. This style of fermentation is an idea done by Franz Zeimetz, an expert brewer from Panama City.
